Rhum Agricole or Agricultural rhum is produced in the French overseas territories and on Madere Island. It is defined by the EU regulation :

Since 1996, the agricultural Rhums from La Martinique, are the only Rhums granted with a French A.O.C. (Appellation d’Origine Contrôlée). A.O.C. Rhums are at the top of the official French quality scale.
Rhum Agricole is produced exclusively from fresh sugarcane juice which is very sensitive to oxidation and contamination; hence why the rhum Agricole distilleries source their sugarcane juice locally.
Production: the process is based on 5 steps:
- The harvest : the cane is cut in the fields and transported to the distillery
- The crushing to extract the juice named vesou. The fresh cane passes through successive millings stages to separate the ‘vesou’ from the fibre remaining after juice extraction process (the bagasse)
- Fermentation: to produce the ethanol and the flavours
- Distillation of the fermented ‘vesou’ to produce the new make spirits
- Aging in tanks, new or used barrels.
For the production of agricultural rum and rum made with sugarcane juice only, Lallemand Craft Distilling recommends to use selected yeast dedicated to this application.
DistilaMax RM selected in partnership with INRA (Institut national de recherche agronomique) in the FR Caribbean Isles from sugarcane juice is the yeast for the production of rhum agricole; Distilamax RM will give you an intense fruity aromatic profile.
We propose also to run your fermentation with DistilaMax CN selected on fresh cane juice in Brazil which will give you a different profile.
If you want a quick start of fermentation, you can use DistilaMax SR selected from molasses which is high stress tolerant. Nutrition with DistilaVite will also help in the first stages of fermentation for strong and healthy yeast in order to get a good kinetic of fermentation and the expected aromatic profile.
